Description of research and teaching

Some microbes naturally present in foods have the potential to improve food texture by producing a type of polysaccharides named dextrans. The in situ produced dextrans need not to be declared and thus could replace hydrocolloid additives, giving rise to clean label or additive free food products. The aim of this work is to exploit the high efficiency of Weissella confusa bacteria in dextran synthesis for tailored modification of food texture. The knowledge on the synthesizing machinery and structural characteristics of W. confusa dextran will enhance future utility of this promising dextran producer in food application. The prospect of W. confusa dextransucrase to produce oligosaccharides with potential health benefits will also be examined.
