Project aims to investigate the commercial potential of farming of house crickets for food on Southern Ostrobothnia region. Different aspects of crickets and cricket farming (economic, tehcnological, hygienic, coulinaristic, consumer preferences) will be investigated. A practical guide covering these topics will be written for potential cricket farmers. The project is coordinated by Luke (natural resources institute Finland) and implemented in cooperation with University of Helsinki and Seinäjoki University of Applied Sciences.
