Description (abstract)

The objective of the project is to enhance the ability of small food businesses to collaborate with institutional kitchens. Particularly, the important role of small-scale innovations is highlighted as a key for small food businesses to create and maintain successful business relationships with institutional kitchens. Accordingly, the project aims to increase the knowledge on institutional kitchens’ market potential for small locally operating food businesses and produce practical guides to highlight the role of small-scale innovations in the successful business relationship between food businesses and institutional kitchens.



The project starts by identifying small food businesses whose supplier relationship with an institutional kitchen is characterized by an innovative product, distribution, marketing or logistics solution. After this, small business owner-managers as well as key actors in institutional kitchens are interviewed in order to recognize the strategic elements affecting the creation of small-scale innovations. The main results of the project are exported to the wider knowledge of small food businesses and institutional kitchens through the number of workshops.
