Tutkimuksen ja opetuksen kuvaus

1). Research

My major research focuses on food materials science and food engineering including microencapsulation and molecular encapsulation of food ingredients, glass transition related issues in food processing and product systems, spray drying, dairy processing, and design of nano- and/or microstructure of food system using wood-based polysaccharides. My primary approach to research is applying fundamental science and engineering principles on developing a relationship between process, structure, property and performance of food materials systems.
