Information om forskning och undervisning

I am working on folate bioaccessibility in cereal and legume products using a static in vitro digestion model. The overall goal is to improve the folate bioaccessibility in these foods. The strategies are: modifiying food structure, decreasing the amount of conjugase inhibitors and possibly bioprocessing.  

Forskningsintressen

Vitamin analysis, in vitro digestion model used to study bioaccessibility and the development of functional foods targeting to different population groups.
